Set aside Heat the oil in a wok or deep saucepan over medium-high heat. Test to see if the oil is hot by putting 1 rice thread in the oil. If it puffs and turns white instantly the oil is ready. Cook the rice threads in small batches- use tongs to remove them from the oil and drain them on paper towel. You can make these the day before- just cool them and store them in ziploc baggies lined with paper towels. Place the shredded lettuce, the shredded chicken, green onions, sesame seeds,water chestnuts and mandarin oranges in a large salad bowl.
