Brittany Bay Chinese Chicken

Brittany Bay Gourmet Chinese Chicken Salad featuring Brittany Bay Gourmet Oriental Sesame

Serves 4 as a main dish, 6 as a starter

2 cups oil for frying
½ pkg. rice sticks (Maifun, available in the oriental section of the store)
1 head of iceberg lettuce – shredded
11/2 cups of cooked skinless chicken breasts- shredded
3 green onions- sliced fine
1 cup toasted slivered almonds
1 can sliced water chestnuts (optional)
1 small can mandarin oranges – drained (optional)
¼ to ½ cup fresh cilantro – chopped (optional)
2 tablespoons toasted sesame seeds
½ to ¾ cup Brittany Bay Gourmet Oriental Sesame Dressing

Toast the almonds for 10 min in a 350-degree oven. Set aside

Heat the oil in a wok or deep saucepan over medium-high heat. Test to see if the oil is hot by putting 1 rice thread in the oil. If it puffs and turns white instantly the oil is ready. Cook the rice threads in small batches- use tongs to remove them from the oil and drain them on paper towel. You can make these the day before- just cool them and store them in ziploc baggies lined with paper towels.

Place the shredded lettuce, the shredded chicken, green onions, sesame seeds, water chestnuts and mandarin oranges in a large salad bowl. Add the rice threads and the Brittany Bay Gourmet Oriental Sesame dressing and toss. Garnish with the cilantro and toasted almonds. ENJOY!
