Brittany Bay Gourmet Chinese Chicken Salad featuring Brittany Bay Gourmet Oriental Sesame
Serves 4 as a main dish, 6 as a starter
2 cups oil for frying
Toast the almonds for 10 min in a 350-degree oven. Set aside
Heat the oil in a wok or deep saucepan over medium-high heat. Test to see if the oil is hot by putting 1 rice thread in the oil. If it puffs and turns white instantly the oil is ready. Cook the rice threads in small batches- use tongs to remove them from the oil and drain them on paper towel. You can make these the day before- just cool them and store them in ziploc baggies lined with paper towels.
Place the shredded lettuce, the shredded chicken, green onions, sesame seeds,water chestnuts and mandarin oranges in a large salad bowl. Add the rice threads and the Brittany Bay Gourmet Oriental Sesame dressing and toss. Garnish with the cilantro and toasted almonds. ENJOY!
In A Hurry?
Buy a package of bagged salad greens, a roasted chicken from the deli and a bag of dry chow mein noodles. Shred the chicken breast meat (reserve the rest for another day). Place the chicken, greens, a couple of sliced green onions and the dry chow mien noodles in a bowl. Toss on the dressing.
